This healthy green immune boosting soup will warm up cold winter days. It's packed with nutrients you need to get through the cold and flu season, it's nourishing, smooth and creamy and loaded with seasonal winter greens.
Ingredients
1 tbsp olive oil
1 chopped onion
1 tbsp happy maple, goût riche
2 chopped scallions
2 chopped cloves of garlic
4 chopped leeks
1 chopped fennel
1/2 chopped broccoli
1/4 tsp salt
1/8 tsp freshly cracked pepper
600 ml (2 cups) water or stock
2 tbsp of fresh basil or cilantro
1/2 cup of (plant-based) milk
Preparation
In a large stockpot, heat oil. Add onions, goût riche, scallions, garlic, and all the fresh vegetables. Sauté for about 5 minutes.
Add water (or stock). Bring to a boil.
Reduce heat and simmer until veggies are cooked through.
Blend vegetables until smooth (I use a food processor to get a super smooth result)
Serve and enjoy!
